Non-alcoholic Tom Collins cocktail with sparkling citrus, ice cubes, lemon slice, and cherry garnish in a highball glass

A non-alcoholic Tom Collins is a non-alcoholic gin, fresh lemon juice and simple syrup, topped with soda water in a tall glass of ice. It's long, light and hard to get wrong: a good first drink for a new bottle.

Our pick is GINSIN 12 Botanics, labeled 0.0%. Its bitter orange, lemon and lavender suit a long drink. For something drier, use Lyre's Dry London.

Steps

Highball or Collins glass · Lemon wheel and cherry

  1. Fill the glass. Fill a highball or Collins glass with ice.
Tip: A tall, full glass keeps it cold and fizzy.
  2. Add the base. Add the gin alternative, lemon juice and simple syrup, and stir to mix.
Tip: Syrup, not sugar: sugar won't dissolve in a cold drink.
  3. Top and garnish. Top with soda water, give it one gentle stir and add a lemon wheel.
Tip: Start with 90 ml soda and taste; you can add more, not less.

Per drink: about 60 calories and 14 g sugar. Estimated from the bottle's label and USDA data.

Make it yours

Herbal

Shake the base with four basil leaves, then strain over ice and top with soda.

Berry

Press four raspberries in the glass before the ice. Pink, and a little tart.

Bitter

A dash of aromatic bitters on top. Drier, with a little spice.

Sparkling tea

Sparkling tea instead of soda. Drier, and it holds its fizz longer.

Pink

Lyre's Pink London: red berries and rosehip. Fruitier and very pretty.

Common questions

What is a non-alcoholic Tom Collins?

A non-alcoholic gin, fresh lemon juice and simple syrup, topped with soda water in a tall glass of ice.

What's the difference between a Tom Collins and a gin fizz?

A Collins is served long over ice with more soda. A fizz is shaken, served shorter with no ice, and often has egg white or aquafaba.

Simple syrup or sugar?

Syrup. Sugar won't dissolve in a cold drink and ends up at the bottom of the glass.

Why does mine go flat so fast?

Warm soda or too much stirring. Use cold soda, add it last and stir once.

Can I make a pitcher?

Mix the gin, lemon and syrup in a jug and keep it cold. Pour over ice and top each glass with soda.

Does it have alcohol?

GINSIN is labeled 0.0%, so as written it has none. Lyre's Dry London and Free Spirits Gin are labeled under 0.5%.

How to serve & pair

Serve tall over ice, straight away.

Good with salads, grilled fish, shrimp and anything you'd eat outside. For the short, sharp version, try the non-alcoholic gimlet.
