Description
A blend of 55% Chenin Blanc and 45% Chardonnay, grown on dry-land farmed vineyards in the Western Cape, where the vines grow untrellised as bush vines on south-west facing slopes, cooled by Atlantic breezes and the cold Benguela current, over deep soils of decomposed granite and clay.
Fermented over fourteen days at 14 to 15°C and handled reductively to keep the fruit bright, then left on lees for two months before being dealcoholized by gently spun cone technology, under vacuum and at low temperature. Yellow apple, lime and chamomile on the nose, then honeysuckle, citrus fruit and jasmine, with an elegant balance of acidity and fruit.
Vegan-friendly. Under 0.5% ABV, and at 2.08 g of sugar per 100 mL the leanest of the three Noughty stills. Contains sulfites.
