About Premium Merlot

Merlot grown on the La Mancha plateau in central Spain. The wine is fermented and matured for twelve months, and the alcohol is then removed by vacuum distillation under reduced pressure, at temperatures low enough that the aromatics are not driven off with it.

Ruby in the glass. Cocoa, pomegranate and cherry on the nose, with tobacco and leather underneath. The tannins are fine rather than grippy and the finish is tart. Pour it with pork tenderloin, grilled meat, turkey or duck.

Halal certified and gluten-free. Screw cap. Contains sulfites. Refrigerate after opening and finish within three days.

About Lussory Premium

A Galician brand making Spanish wine from La Mancha fruit, matured a full year before the alcohol comes out.

Lussory is made in Spain, and the back label carries Dismark Products of Santiago de Compostela — the far northwest, where the Atlantic weather comes in. The fruit is from somewhere else entirely. It comes off La Mancha, the wide, high plateau south of Madrid, and both ranges are built from it: Airen and Tempranillo, Merlot and Chardonnay, all grown a long way from the corner of Spain the brand comes from.

The wine is made conventionally and matured for twelve months before anything is removed. The alcohol then comes off by vacuum distillation, under reduced pressure and at temperatures low enough that the aromatics are not driven off with it. Taking it out at the end rather than never letting it in is what leaves the reds their grip and the whites their fruit.

Two ranges sit under the name. The Premium bottles run through Merlot, Tempranillo, Airen and Chardonnay to a Rosé, a sparkling Brut, and the 24K Gold. The Organic range is the smaller of the two: a Merlot, a Chardonnay and a Brut of its own.

New to Non-Alcoholic Red Wines?

Both routes exist in this category: some reds are fermented as wine and then dealcoholized, others never fermented at all. The Process line on this page says which. Origin and grape still shape the wine the way they always did — Cabernet Sauvignon and Tempranillo keep their grip, Merlot and Garnacha land softer — and the alcohol figure is worth reading, since 0.0% and under 0.5% are not the same thing.

Common questions
Is Lussory Premium Merlot dealcoholized or never alcoholized?
Dealcoholized. The wine is fermented and matured for twelve months first, then the alcohol is removed by vacuum distillation under reduced pressure, at a temperature low enough that the aromatics are not driven off with it. That order is why there is structure left to taste.
How is it different from the Lussory Organic Merlot?
Different fruit and a different sweetness. The Premium runs 3.8 g of sugar per 100 mL against the Organic Merlot's 4.2 g, and pours ruby where the Organic is garnet. The Premium leans cocoa and pomegranate; the Organic leans blackberry and milk chocolate. Only the Organic carries the EU organic leaf; only the Premium carries a halal mark.
Will it taste like red wine or like grape juice?
Closer to wine, and the tannin is why. Because the fruit is fermented before the alcohol comes out, there is grip on the finish that grape juice cannot imitate. It is lighter in body than a Merlot with alcohol, and the finish is tart rather than warm.
How long does Lussory Premium Merlot keep once opened?
Three days, refrigerated. That is shorter than an opened bottle of wine with alcohol in it, because the alcohol was doing part of the preserving. Re-cork it and put it in the fridge, including the reds.
