Description
Albariño and Airén, two Spanish whites that do different jobs — the first brings the aromatics and the salt-edged acidity of Galicia, the second the body. Vinified together, then the ethanol removed at low temperature with the aromatics recovered and returned.
The result is structured rather than thin, with citrus and orange peel over a density that carries into a long finish. Élivo built it for the table rather than the toast: a glass with lunch, or an aperitif while something cooks.
Synthetic cork, so it takes a corkscrew. Serve at 46 °F. Six glasses at a 125 mL pour.
