About Bianco Dry

Bianco Dry is the still white in the alternativa range. Dry is the designation Princess prints on the label rather than a measured classification, so the nutrition panel is the better guide to what is in the glass.

The wine is made in full in Trentino and the alcohol is drawn out of the finished wine afterwards, with grape must returned to the blend. It comes under natural cork, which is not the usual closure on an alcohol-free white.

Treat it as you would a dry Italian white at the table: with fish, with a risotto, or poured on its own before a meal.

About Princess Alternativa

An Italian producer in the Trentino valley that has been taking the alcohol out of wine since 2012.

Princess began in 2012 in Lavis, a town in the Trentino valley north of Verona, when Michele Tait wrote up a study on lowering the alcohol in the wines then on the market. He came to the question after years in the cellar and the vineyard rather than from outside the trade, and what he was answering was a demand the shelf was not meeting.

The first bottles still carried a little alcohol, enough to sit under the limit that lets a drink be called analcolica in Italy. The line that carries the name arrived the year after, and it is made the longer way round: the wine is vinified in full and the alcohol drawn out afterwards, without chemical treatment. Princess is direct about what that leaves, and about what it is not, which is grape juice or must.

The name is the Italian word for alternative, and it was chosen to say plainly what the range was for. It runs through still whites, rosés and reds, a set of sparkling Bollicine from dry through extra dry to sweet, and an aperitivo alongside them. All of it is made in Lavis.

New to Non-Alcoholic White Wines?

Grape and sweetness do the work. Sauvignon Blanc and Riesling stay bright and cutting; Chardonnay is rounder. The sugar figure is what separates crisp from soft, and it is on the page.

Common questions
The label says Dry. How dry is it?
Dry is the designation Princess prints rather than a measured classification. The sugar figure on the nutrition panel on this page is higher than the word suggests, so read the panel rather than the name.
Can I cook with it?
Yes, in dishes where the wine is not reduced for its alcohol — a poaching liquid, a light pan sauce, a risotto. It will not deglaze the way a wine with alcohol does.
