Which tonic works best with a non-alcoholic gin?
A dry, low-sugar tonic with real quinine. There is no alcohol to balance sweetness, so a standard tonic can flatten the botanicals it is poured over. Use a chilled bottle rather than a tap of soda gun, keep the ratio around three to one, and garnish generously.
Do mixers contain alcohol?
Tonic, soda and ginger beer are non-alcoholic as sold. Traditionally brewed ginger beer can carry a trace from fermentation, and producers who ferment theirs say so on the label. Where a figure is stated, it is recorded on the product page.
How do I keep a mixed drink from going flat?
Chill everything first, including the glass, and pour the mixer down the side over ice rather than straight onto it. Open a fresh small bottle instead of using a large one over several drinks. Stir once, briefly, and not at all after that.
