Behind our choiceWritten August 2026

Michelin kitchens pour this, and not as a gesture — it holds its own on the table, through a course, against food. The Darjeeling first flush leaves a real tannin at the back of the palate, doing the work grape skin does in wine, while the jasmine and white teas carry the aromatics. This is tea making its own case, not standing in for something else.

About BLÅ

The jasmine is grown in China at around 1,300 to 1,450 metres, where the blossoms are picked in the morning and layered into green tea leaves — an infusion repeated over hours or weeks, depending on the blend. The tannin comes from Darjeeling first flush, the delicate, floral picking rather than the muscatel-heavy second.

Pale amber in the glass, and the colour is the first hint that this is tea rather than an imitation of wine. Most alcohol-free sparkling builds its body from sugar; this builds it from tea. The white teas round it, the green teas give it depth, and the Darjeeling leaves something at the back of the palate that behaves the way grape skin does in wine — which is why it holds its shape against food where most 0% bottles thin out into soft drink.

It isn’t the driest bottle we sell. Its own sibling Lyserød is drier, at the same price. But if you want the one that makes the case for tea as a wine alternative rather than a substitute for it, this is it.

About Copenhagen Sparkling Tea Company

Sommelier-built tea blends treated the way a winemaker treats grapes.

“some of the best no- or low-alcohol drinks I have ever tasted”
Julia Harding MW, JancisRobinson.com

In 2010, Jacob Kocemba was working the floor of a Michelin-starred kitchen in Copenhagen. The chef changed a dessert at short notice, and with more than seventeen hundred wines in the cellar behind him there was nothing on the list that worked with it. What he poured instead was a tea he had blended himself. Guests began asking for it by name.

Hundreds of trials later he had the basis for a range. In 2017 he partnered with Bo Sten Hansen and they sold their first bottle in Copenhagen that May. It is poured today in Michelin-starred restaurants around the world. When Fortnum & Mason first stocked the teas in London, the window read "Tea but not as you know it."

New to True Alcohol Alternatives (Beyond Wine & Spirits)?

The ambition is the same as any good wine or spirit: real structure and complexity, built from the drink's own materials. Tea brings tannin, roots and bark bring bitterness, fermented fruit brings acidity and depth. The foundation shapes everything above it, and the ingredient list tells you which one the maker started from.

Common questions
Is it actually alcohol-free, or dealcoholized?
Never alcoholized. It is brewed from tea and carbonated, so no alcohol is made and none is removed — which is a different process from a dealcoholized wine. The label reads 0%, and that is the producer stating it rather than a rounding of something smaller.
Does it contain caffeine?
Yes. It is brewed from real tea, so BLÅ carries about 5.4 mg of caffeine per 100 mL — well under a cup of tea, but not none. Worth knowing if you are pouring it late, or for someone avoiding caffeine.
How long does it keep once opened?
About three days in the fridge, and it loses its bubbles faster than a still drink would, so a stopper is worth using. That is the honest reason the half bottle exists — about two and a half pours, opened and finished, with nothing left standing to go flat.
How should I serve it?
Well chilled, between 39 and 45°F, in a white wine glass rather than a flute. It carries real aroma and a narrow glass throws it away. The bottle has a Champagne cork — untwist the cage and ease it out, no corkscrew.
