Non-Alcoholic Spirits & Mixers

Non-alcoholic spirits are mostly built upward rather than stripped down. Where a dealcoholized wine starts as wine, most spirit alternatives start from botanicals macerated or distilled into a base that never held alcohol, which is why they are described as alternatives rather than as gin or whiskey. The difficult part is the bite. Alcohol gives a drink heat and a certain weight on the tongue, and a botanical blend has no direct substitute for either, so producers reach for pepper, ginger, capsicum and bitter roots to stand in. Oil-based extracts hold up over ice where flavored water thins out.Almost everything here is made for mixing rather than for sipping neat, and the mixers and bitters on the same shelf are the other half of the drink.

Frequently Asked Questions
What is a non-alcoholic spirit made from?

Botanicals, in most cases, rather than a distilled spirit with the alcohol taken out. Juniper, citrus peel, bitter roots, spices and peppers are macerated or distilled into a base and blended. A smaller group is made the other way, by distilling to alcohol first and removing it afterward.

Do non-alcoholic spirits taste like the real thing?

They land closer in a cocktail than in a glass on their own. Mixed with tonic, citrus and ice, the gap narrows to very little. Neat, the absence of alcohol shows as a shorter finish and less warmth, which is why most producers build these for mixing.

Can you use them as a one-for-one substitute in a cocktail?

Generally yes, pour for pour, and most are designed that way. Two adjustments help. Cut the dilution slightly, since there is no alcohol to carry it, and taste before adding sweetener, because several of these carry more residual sugar than the spirit they replace.

Why do non-alcoholic spirits cost as much as alcoholic ones?

Because the botanicals and the distillation are the expensive part, and neither goes away. Distilling each ingredient separately, which several producers do, costs more again. What falls away with the alcohol is the excise duty, and that is a smaller share of a bottle's price than most people expect.
