Made in full first, then the alcohol taken out. Fermentation runs as it would for any wine or beer, so the aromatics and structure are built before anything is removed.

Frequently Asked Questions
Does dealcoholized wine taste like wine?

It was wine first, and that is what you taste. Fermentation is where a wine's aromatics come from, so a dealcoholized bottle carries the fruit, the acidity and the varietal character of the grape it was made from. It pours lighter than a full-strength wine, which makes it easy to drink across a whole meal.

How is the alcohol actually removed?

Usually by vacuum distillation, which lowers the boiling point so the wine is never heated enough to cook, or by reverse osmosis, which filters it out under pressure. Both aim to protect the aromatics, and producers often state which they used.

How should I store it once opened?

Reseal it and refrigerate it, and treat it the way you would a good fruit juice — it is at its best in the first few days. Buying the size you will actually drink is the simplest way to get the most from a bottle.
