Why did alcohol-free spirits start in Britain?

A London distiller released the first widely distributed alcohol-free spirit in 2015, built on the same botanical distilling that gin had made familiar there. The method it established drew a generation of producers into the same market.

What is a botanical distillate?

A single botanical steeped in water and distilled on its own, then blended with others. Distilling each ingredient separately takes far longer than distilling a basket of them together, and it is why a good British alcohol-free spirit tastes of a specific plant rather than of a general green note.

Do British alcohol-free spirits contain any alcohol?

Most are a measured 0.0%, since nothing was fermented in the first place. A few carry a trace from a botanical extract. The Alcohol Content filter records the level each producer states.
