Non-Alcoholic Drinks from Mexico
Mexican production, built on agave. Agave spirits take their roasted, vegetal character from cooking the plant rather than from the alcohol, which is why the alcohol-free versions carry so much of the original.

What does Mexico make in this category?
Agave-led drinks, above all. Agave takes its roasted, vegetal character from cooking the plant rather than from fermentation, so a great deal of what defines a tequila or a mezcal survives being made without alcohol.
Is agave the same as agave syrup?
No. Agave syrup is a sweetener pressed from the plant's sap. What these drinks are built on is the cooked heart of the plant, which is savory and smoky rather than sweet, and is the same starting point a tequila uses.
Do Mexican non-alcoholic drinks have any heat?
Frequently, and deliberately. Capsicum drawn from peppers stands in for the prickle alcohol would give an agave spirit. How much varies a good deal between producers, and it is one of the clearest differences between bottles.
