What does Japan make in this category?
Mostly beer and citrus-led drinks, out of a brewing culture that treats alcohol-free as a technical problem worth solving properly rather than as a lesser version of something. The results lean toward precision and clarity instead of imitation.
Why is citrus so common in Japanese non-alcoholic drinks?
Because Japan grows citrus varieties that exist almost nowhere else, and their aromatic oils survive a process that strips alcohol. Yuzu, sudachi and kabosu are sharper and more floral than lemon, and a small amount carries a long way in a drink with no alcohol to lift it.
Is Japanese alcohol-free beer different?
Often, yes. Japanese brewers tend toward a cleaner, drier finish and less residual sweetness than the European alcohol-free style, which can otherwise read as malty when the alcohol goes. The styles brewed range well beyond lager.
