Non-Alcoholic Drinks from France

French producers, drawing on the country's own winemaking and its long tradition of botanical liqueurs. France was among the first countries to dealcoholize wine at commercial scale, and several producers here have been doing it for longer than the current category has existed.

Frequently Asked Questions
Are the wines here made from real French wine?

The dealcoholized ones are — fermented as wine first, then the alcohol removed, which is why they read as wine rather than as flavored juice. France also makes botanical spirits and liqueurs without alcohol, and the process axis tells you which is which.

What does dealcoholization do to a French sparkling wine?

It takes the alcohol out after the wine is finished, so the fruit and the acidity remain and the weight does not. The bubbles are added afterward, because a second fermentation in the bottle would put the alcohol back. Picking early, while the acidity is high, is how several French producers compensate.

Are French alcohol-free liqueurs sweet?

The fruit ones are, and they are built that way, because a liqueur is defined by sugar and flavor rather than by strength. The bitter, herbal styles are much drier. Both come out of the same long French tradition of steeping botanicals rather than distilling them.
