How did a brandy grape become a table wine?
The same high acidity that made Colombard ideal for distilling makes it wonderfully refreshing when bottled young and served cold. Its history explains its style — it was always built for brightness.
Does Colombard work without alcohol?
Very well, because it was never a wine that leaned on weight. Its whole appeal is brisk citrus acidity, which survives the process almost untouched. It is one of the more reliably refreshing whites on the site.
What should I serve Colombard with?
Anything fried, anything salty, and shellfish. High acidity cuts through fat in a way that a rounder white cannot, and it does the job of a squeeze of lemon.
