Non-Alcoholic Chardonnay

The most planted white grape in the world, and the one that shows most about where it grew. Unoaked in Chablis it is lean and stony; oaked in California it is broad and golden. It is also one of the three grapes of Champagne.

Frequently Asked Questions
What does Chardonnay taste like, and does it differ without the alcohol?

It depends more on handling than on the grape — citrus and green apple where it is made lean, stone fruit and vanilla where oak is used. The unoaked, mineral styles translate most directly here, and they are the ones to reach for: crisp, precise and built around fruit and acidity, which is exactly what this shelf does best.

Is there a non-alcoholic Chardonnay that tastes like Chardonnay?

The lean, unoaked styles translate most closely, since citrus and green apple are aromatic and survive intact. Oaked, buttery styles have further to fall, because much of what makes them rich was texture rather than flavor. Expect a dealcoholized Chardonnay to read more mineral than its counterpart.

How should a dealcoholized Chardonnay be served?

Cool but not cold, nearer 50°F than 40°F, and in a glass with a wide bowl. Over-chilling costs it the aromatics that are doing most of the work. Give it ten minutes out of the refrigerator if it has been in overnight.
