Non-Alcoholic Albarino
From Galicia on Spain's Atlantic coast, Albariño gives citrus and stone fruit with a saline edge and firm acidity. Thick skins let it thrive in a wet, windy climate few white grapes tolerate.

What should I eat with Albariño?
Shellfish, and it is not a close contest. The saline character and the acidity are what Galicia built its cuisine around — clams, prawns, octopus, anything grilled and squeezed with lemon.
Does Albarino keep its character without alcohol?
Unusually well. Its signature is acidity and a saline, citrus aroma, and both are among the things a low-temperature process preserves most reliably. What thins is the mid-palate weight that Galician producers often build with lees contact.
How cold should Albarino be served?
Around 45°F, and out of the refrigerator rather than a bucket. Too cold and the stone fruit closes down, leaving only the acid. It warms quickly in the glass, which is part of how it is meant to be drunk.
