More about Sovi
Who they are
Sovi started in Napa in 2020. Julia and Alex Littauer met working at a large wine company there, went to business school together, and came back with a single idea: that a wine with the alcohol taken out deserved the same fruit and the same care as one with the alcohol left in. Julia is a certified sommelier.
The name is two halves. So, meaning to a great extent, and vi, from vinous — a great fondness for wine. It reads as a description of the founders before it reads as a label.
What separates them is where they stand in the process. Sovi buys direct from growers in California and is there from bud break through harvest and fermentation, with the alcohol gently distilled out at the very end. The wine is made first, and made as wine; the removal is the last step rather than the starting point.
Three bottles carry the range. A Chenin Blanc off Heringer Estates in the Clarksburg AVA, a red, and a skin-contact sparkling orange they call The Wild Child.

Who makes Sovi?
Julia and Alex Littauer, a husband-and-wife pair in Napa, California. They founded it in 2020 after meeting at a large wine company in the valley.
Where does the fruit come from?
California, bought direct from the grower. The Chenin Blanc and The Wild Child both come off Heringer Estates in the Clarksburg AVA, on the Sacramento River Delta.
How is the alcohol removed?
By gentle distillation, after the wine has been fermented and made in full. Sovi is involved from bud break onward, so the removal is the last step rather than the whole method.
