More about Aplos

Who they are

Aplós launched in New York in December 2020, founded by David Fudge and Emily Onkey. Both had come out of direct-to-consumer brand building rather than drinks, and the question they started from was a design question as much as a drinks one: if a fashion house made a spirit, what would it be. The name is Greek for simple.

The first release was developed with Lynnette Marrero, the bartender behind Speed Rack and a James Beard honoree, and that collaboration set the house style. Aplós does not imitate gin or whiskey. It builds a citrus-and-herbal liquid with a bitter finish, which is what lets it behave like a spirit in a glass instead of a cordial, and it is formatted to be poured a couple of ounces at a time over ice rather than drunk from the bottle.

The range grew from that one bottle into three, then into a line of canned cocktails built from the same liquids rather than formulated separately. The naming follows the same logic throughout. There is no Aplós gin and no Aplós tequila — there is Calme, Ease and Arise, and what separates them is the botanical each is built around.

Frequently Asked Questions
What does “functional” mean on an Aplós label?

Aplós make claims about mood and energy. beClink is a shop, not a laboratory, and has not tested them. These statements have not been evaluated by the Food and Drug Administration. This product is not intended to diagnose, treat, cure or prevent any disease. Aplós also advise against their drinks for anyone under 18, or pregnant, nursing, taking medication or living with a liver condition.

Why is there no Aplós gin?

Because each bottle is named for what is in it rather than for a spirit it replaces. There is Calme, Ease and Arise, and what separates them is the botanical each is built around.

Who makes it?

David Fudge and Emily Onkey, in New York, from December 2020. The first release was developed with Lynnette Marrero, the bartender behind Speed Rack.

What is the difference between the bottles and the cans?

The cans are made from the same spirits. Each canned cocktail is built on one of the bottles, so the bottle is the mixing ingredient and the can is the drink already made.
