Non-Alcoholic Whiskey Sour

Whiskey alternative, lemon and a proper foam — the drink that shows what a hard shake is for.

Non-alcoholic whiskey sour mocktail with foamy top, lemon slice, and cherry garnish in a rocks glass

A whiskey sour is three ingredients and one technique. The bottles matter, but the shake matters more: without a good foam this is just whiskey and lemon, and with one it's a bar drink. Aquafaba does what egg white used to, and nobody will know the difference.

Ingredients

Method

  1. Add Whissin, lemon juice, simple syrup, and aquafaba to a shaker without ice.
  2. Dry shake (without ice) for about 10–15 seconds to build foam.
  3. Add ice and shake again for 10–15 seconds until chilled.
  4. Strain into a chilled coupe glass.
  5. Let the foam settle, then add 1–2 drops of bitters on top.
  6. Garnish with a lemon twist or cherry.

Make it yours

Bitters on top

A few drops on the foam, dragged into a pattern. Two seconds, and it makes the drink.

New York

Float a spoonful of non-alcoholic red wine over the back of a spoon. Striking.

Maple

Maple syrup instead of simple. Rounder, and very good in winter.

Common Questions

Why dry shake first?

Shaking without ice lets the aquafaba build a foam before the cold sets it. Ten seconds dry, then again with ice.

Can I use egg white?

Yes, one fresh white. Aquafaba is here because it's vegan and keeps longer in the fridge.

My foam collapses — why?

Usually too much ice in the second shake, or serving into a warm glass. Chill the coupe first.

Is it meant to be sour?

Tart rather than sour. If it's puckering, add five more millilitres of syrup and shake again.
