Spicy Ginger Margarita Mocktail

Ginger, lime and chilli salt — the margarita with heat in it, and the most requested variation there is.

Heat and lime were made for each other, which is why the spicy margarita has quietly become the default order in a lot of bars. Ginger liqueur does the work more evenly than fresh chilli, and the rim carries the rest. Warming rather than fiery, unless you want it otherwise.

Method

  1. Run a lime wedge along the rim of the glass and dip into salt or chili-salt.
  2. Fill a shaker with ice.
  3. Add non-alcoholic tequila, lime juice, ginger liqueur, and agave syrup.
  4. Add optional bitters for added depth.
  5. Shake well for about 10–15 seconds until chilled.
  6. Strain into the prepared salt-rimmed glass over fresh ice.
  7. Garnish with a lime wedge or chili slice.

Properly hot

Two slices of jalapeño muddled in the shaker as well. Now it's fiery.

Smoky heat

Swap a third of the base for non-alcoholic mezcal. Smoke and ginger are excellent together.

Cooling

A few mint leaves in the shaker. Takes the edge off without losing the warmth.

Common Questions

Ginger liqueur or fresh ginger?

Liqueur, for consistency — fresh ginger varies wildly and can turn the drink fibrous. Muddle fresh if you want it sharper.

How hot is it really?

Warming rather than hot. The heat builds over a couple of sips and the chilli salt does more than the ginger.

How do I make chilli salt?

Flaky salt and chilli flakes, roughly equal, crushed together. Keeps indefinitely.

Can I make it less sweet?

Drop the agave — the ginger liqueur is already sweet. Taste before you add any.
