The Collins is the most forgiving cocktail there is: spirit, citrus, sugar, bubbles, ice, done. That makes it the perfect place to try a non-alcoholic gin you're unsure about, because there's nowhere for it to hide and nothing to go wrong.

Make it yours

Herbal

A few basil leaves in the shaker. Turns it green and considerably more interesting.

Berry

Muddle raspberries before shaking. Colour, tartness, and it looks like you tried.

Tea

Swap the soda for non-alcoholic sparkling tea. Drier, and it holds its fizz longer.

How to serve & pair

Serve this Botanical Collins well chilled in a highball glass to emphasize its refreshing, easy-drinking character. This alcohol-free cocktail pairs beautifully with:

  • light appetizers
  • salads and fresh dishes
  • grilled vegetables
  • seafood
  • summer meals

Perfect for daytime drinking, outdoor gatherings, or a refreshing alcohol free cocktail option.

Common questions

Simple syrup or sugar?

Syrup, every time — sugar won't dissolve properly in a cold drink and you'll find it at the bottom.

Can I make simple syrup at home?

Equal parts sugar and hot water, stirred until clear. It keeps a month in the fridge.

Why does mine go flat so fast?

Add the soda last and don't stir it in. Pour it over the top and let it find its own way down.

How much soda is right?

Start at 90 ml and taste. Long drinks are easy to lengthen and impossible to shorten.
