Non-Alcoholic Negroni

Equal parts gin, bitter aperitif and amaro over ice — the classic, and the drink most worth getting right.

Zero proof Negroni cocktail mocktail with dried orange garnish in a rocks glass – alcohol-free Italian aperitivo drink

Rocks glass

Garnish

Orange peel

Three ingredients, equal measures, stirred. The Negroni is the simplest classic to make and the least forgiving, because there's nothing in it but the bottles you chose. Which makes it either the best advert for non-alcoholic spirits or the worst, depending entirely on what you pour.

Ingredients

Method

  1. Fill a rocks glass with ice.
  2. Add the gin alternative, the bitter aperitif and the amaro in equal measures.
  3. Add a dash of aromatic bitters if desired.
  4. Stir gently for about 20 seconds to chill and dilute.
  5. Express an orange peel over the drink and garnish.

Make it yours

Sbagliato

Sparkling wine in place of the gin, topped rather than stirred. Lighter, and a genuinely different drink.

Long

Over ice in a highball with soda. Two of these is a perfectly reasonable evening.

With sparkling tea

Lengthen it with sparkling tea instead of soda. Drier and more tannic than a spritz, and it holds its bubbles longer than sparkling wine does.

Sweeter

Shorten the amaro, lengthen the gin. Two to one is a gentler place to start.

Bigger

A third measure of non-alcoholic vermouth for a fuller build. More weight, a little more sugar.

Coffee

Swap the amaro for a coffee liqueur, still in equal parts. It moves the drink from before dinner to after it, and coffee and bitterness get on better than they have any right to.

Orange, not lemon

A wide peel expressed over the glass and dropped in. The oil is doing the work, not the fruit.

How to serve & pair

Serve this alcohol-free Negroni over a large ice cube to preserve its bold flavor and balance.

It is bittersweet and savory, so it pairs with the food that suits an aperitivo hour — marinated olives, charcuterie, aged cheeses, roasted nuts, anything Mediterranean and salty. Made for the hour before dinner, dinner parties, or an alcohol-free cocktail evening.

Common questions

Is it supposed to be this bitter?

Yes — that's the drink. If it's too much, shorten the amaro rather than adding sugar.

Which non-alcoholic gin works best?

A juniper-forward one. Softer, floral gins get buried under the other two bottles, which is why the shelf below leads with a London dry style rather than an aromatic one.

Do I have to stir it?

Stir, don't shake. Everything here is clear and shaking would cloud it and thin the texture.

Can I batch it for a party?

Ideally. Mix equal parts in a bottle, keep it in the fridge, and pour over ice with a peel. It improves for sitting.
