Non-alcoholic aperol spritz mocktails with orange garnish and fresh herbs – zero proof aperitivo cocktail variations

An Aperol spritz mocktail is a non-alcoholic orange aperitif, non-alcoholic sparkling wine and a splash of soda, poured over ice in a big wine glass. The ratio is the whole recipe: three parts bubbles, two parts aperitif, one part soda.

Lyre's Italian Spritz is built to taste like the classic orange aperitif, so start there. Then try it sharper with a Campari-style bitter, or drier with sparkling tea.

Steps

Large wine glass · Orange slice

  1. Fill the glass. Fill a large wine glass with ice.
Tip: More ice, not less: it melts slower and keeps the spritz from going watery.
  2. Add the aperitif. Pour in the orange aperitif.
Tip: Measure it; too much makes the drink sticky.
  3. Top with bubbles. Add the sparkling wine, poured down the side of the glass, then the soda last.
Tip: Soda goes in last and on top, so it keeps its fizz.
  4. Stir once and garnish. Give it one gentle stir and add an orange slice.
Tip: One stir only; more knocks the bubbles out.

Make it yours

Italian bitter

Use 45 ml of Lyre's Italian Orange, a Campari-style aperitif. It's stronger, so use less. Sharper, and better with food.

Bittersweet

Wilfred's Bittersweet Aperitif gives rhubarb and rosemary instead of orange. Use the same 60 ml.

Sparkling tea spritz

45 ml aperitif and 120 ml sparkling tea, no wine and no soda. Drier, more tannic, and it holds its fizz longest.

For a crowd

Build each glass to order; a pitcher of spritz goes flat. Set out the aperitif, a bucket of bubbles and a bowl of orange slices.

Common questions

What is an Aperol spritz mocktail?

An Aperol-style spritz without alcohol: a non-alcoholic orange aperitif, non-alcoholic sparkling wine and soda over ice.

What's the ratio for a spritz?

Three parts bubbles, two parts aperitif, one part soda. Here that's 90 ml sparkling wine, 60 ml aperitif and 30 ml soda.

What can I use instead of Aperol?

A non-alcoholic orange aperitif such as Lyre's Italian Spritz. For a more bitter drink, Lyre's Italian Orange; for rhubarb and herbs, Wilfred's.

Can I make it without sparkling wine?

Yes: use more soda, or sparkling tea for a drier spritz. Wine gives more body.

Why does my spritz taste flat?

Usually warm bubbles or too much stirring. Chill the bottles, add the soda last, and stir once.

Does a spritz mocktail have alcohol?

Lyre's aperitifs and sparkling wine are labeled under 0.5%. For 0.0%, use a sparkling wine labeled 0.0%, such as Le Petit Beret Blanc de Blancs.

How to serve & pair

Serve straight away, in a large wine glass over plenty of ice.

Good before dinner with olives, crisps, bruschetta or a charcuterie board. For the bitter, stirred version, try the non-alcoholic Negroni.
