Non-Alcoholic Negroni Sbagliato

A Negroni with bubbles instead of gin — lighter, longer, and the easiest one to make.

non alcoholic negroni sbagliato cocktail with Wilfreds aperitif served in flute glass with rosemary garnish

Time

3 min

Serves

1

Base

Bitter aperitif

Glass

Wine glass

Garnish

Orange slice, orange twist, or sprig of rosemary

Sbagliato means mistaken, and the story goes that a bartender reached for sparkling wine instead of gin. It was a good mistake. You lose the juniper and gain lift, which makes this the Negroni for people who find the original hard work.

Method

  1. Fill a wine glass with plenty of ice.
  2. Add Wilfred’s Aperitif.
  3. Top with sparkling non-alcoholic prosecco.
  4. Add a dash of non-alcoholic sweet vermouth or bitters.
  5. Gently stir to combine.
  6. Garnish with an orange slice, orange twist, or sprig of rosemary.

Make it yours

Drier

Use a brut sparkling and skip the bitters. Cleaner, more aperitivo.

Bigger

A splash of non-alcoholic vermouth adds weight without much sweetness.

Rosé

Sparkling rosé instead of white. Prettier, and slightly fruitier.

How to serve & pair

Serve this Negroni Sbagliato mocktail well chilled in a large wine glass to highlight its bright citrus aromas and lively bubbles. This refreshing alcohol-free aperitivo pairs beautifully with:

  • Italian antipasti
  • marinated olives
  • prosciutto and cheese boards
  • light bruschetta
  • roasted vegetables

Perfect for aperitivo hour, dinner parties, or elegant alcohol-free celebrations.

Common questions

How is this different from a spritz?

Proportion. A spritz is mostly bubbles with a measure of bitter; a Sbagliato is closer to equal parts, so it's considerably more bitter.

Do I need the bitters?

No — they're there for depth if you want it. Two dashes is plenty.

What sparkling wine works best?

Something dry. The aperitif brings sweetness already, and a sweet sparkling tips the whole thing over.

Stir or build?

Build in the glass over ice and stir once, gently. Anything more and you lose the bubbles.
