Lemon drop mocktail served up in a martini glass with a lemon wheel and a lemon twist, against a warm background

A Lemon Drop is three ingredients and one decision: how sweet you want it. Lemon and sugar are doing the whole drink, and the ratio between them is the recipe. Start where this one starts, taste it, and move it a few milliliters in whichever direction suits you.

The sugared rim is not decoration. It front-loads sweetness on the first sip so the drink itself can stay sharp, which is why a Lemon Drop with a rim can afford less syrup than one without.

Steps

Coupe · Lemon twist

  1. Sugar the rim. Spread the sugar on a small plate. Run a lemon wedge round the outer edge of a coupe and turn it in the sugar, keeping the inside of the rim clean so the sugar does not fall into the drink.
Tip: Outside of the rim only.
  2. Add everything. Add the vodka alternative, lemon juice and simple syrup to a shaker with ice.
  3. Shake hard. This drink is served up with nothing to hide behind, so it needs to be properly cold and properly diluted.
Tip: Ten seconds, until the shaker is very cold.
  4. Fine strain. Fine strain into the prepared coupe. Fine straining matters here — lemon pulp on the surface of a clear drink is the difference between made and mixed.
  5. Garnish. Garnish with a lemon twist, expressed over the surface first.

Per drink: about 45 calories and 11 g sugar. Estimated from the bottle's label and USDA data.

Make it yours

Sharper

Drop the syrup to 10 ml and keep the rim. The rim carries the sweetness and the drink stays bracing underneath it.

Rounder

Honey syrup in place of simple syrup, at the same measure. It softens the edges and adds a little body, which a non-alcoholic version can use.

Blueberry

Four or five blueberries muddled in the shaker before you add the ice. It turns the drink deep purple and takes the edge off the lemon without adding much sugar.

Meyer lemon

If you can get them. Sweeter and more floral than a regular lemon, and you will want to cut the syrup by a third.

Long

Same build, poured over ice in a highball and topped with sparkling water. Less intense, lasts longer, and better in the afternoon than at the end of dinner.

Common questions

How sweet should it be?

Two parts lemon to one part syrup is the starting point and it is deliberately on the sharp side. Taste it in the shaker before you strain — a few milliliters either way changes the drink completely, and there is no right answer beyond your own.

Do I need the sugared rim?

No, but it changes the recipe if you skip it. The rim front-loads sweetness on the first sip, which is what lets the drink itself stay sharp. Without it, add about 5 ml more syrup.

Can I use bottled lemon juice?

It will work and it will taste flat. Bottled citrus loses the top note within hours of opening, and in a three-ingredient drink there is nothing else in the glass to cover for it. One lemon gives you enough for two drinks.

What is simple syrup?

Sugar and water in equal parts, warmed until the sugar dissolves and then cooled. It takes five minutes, keeps for weeks in the fridge, and it dissolves into a cold drink where granulated sugar will not.

Which non-alcoholic vodka works best?

A citrus-forward or botanical one sits most comfortably here — the drink is already lemon-led and a bottle that leans the same way reinforces it. A savory vodka alternative fights the sugar and is better kept for a Bloody Mary.

Does it have alcohol?

Optimist Bright, CleanCo and USKO are all labeled 0.0%, so as written it has none.

How to serve & pair

Serve it up in a chilled coupe, sugared rim outward, and drink it while it is still very cold.

It suits the end of a meal better than the start of one, and it pairs with lemon tart, shortbread, cheesecake and anything with cream in it.
