Non-alcoholic dirty martini mocktail in a martini glass with olives and olive brine garnish

A dirty martini mocktail is a non-alcoholic gin stirred ice-cold with olive brine and strained into a chilled glass. It's salty and savory rather than sweet, and the brine gives it the weight that alcohol usually would.

A classic dirty martini also has a little dry vermouth. Our pick is Roots Divino Bianco, a white vermouth alternative with rosemary, thyme and lemon. It's a little sweeter than a dry vermouth, so 5–10 ml is plenty; leave it out and the brine carries the drink on its own. For the clean version, see our non-alcoholic martini.

Steps

Martini glass or coupe · Green olives on a pick

  1. Chill the glass. Put a martini glass or coupe in the freezer, or fill it with ice water while you mix.
Tip: A warm glass ruins this drink in a minute.
  2. Stir. Add the gin alternative, olive brine, vermouth and bitters to a mixing glass with plenty of ice. Stir for 20–30 seconds.
Tip: Stir, don't shake: shaking clouds it and thins it.
  3. Strain and garnish. Empty the glass, strain the drink in, and add the olives on a pick.
Tip: Keep the gin in the freezer for an even colder drink.

Make it yours

Filthy

Up to 45 ml brine. Saltier and heavier; there's no wrong amount, only taste.

Just a little dirty

15 ml brine and a lemon twist. Lets the botanicals through.

More herbal

VERSIN in place of Roots Divino: sage, wormwood and dried flowers, a little more bitter.

Softer or sharper

GINSIN is gentle and botanical; Lyre's Dry London is juniper-forward and pushes back against the salt.

Common questions

What is a dirty martini mocktail?

A non-alcoholic gin stirred with olive brine over ice and strained into a chilled glass, garnished with olives.

What brine should I use?

The brine from your olive jar. Castelvetrano brine is mild and buttery; Kalamata is sharper.

Why does mine taste flat or too salty?

It isn't cold enough. At room temperature the salt takes over; stir with plenty of ice and chill the glass.

Do I need vermouth?

No, but 5–10 ml adds a herbal edge. Roots Divino Bianco and VERSIN are white vermouth alternatives, a little sweeter than a dry vermouth, so keep it small.

Shaken or stirred?

Stirred. Shaking clouds the drink and makes it thinner.

Does it have alcohol?

GINSIN is labeled 0.0%, and so are both vermouths and our bitters. Other gin alternatives are labeled under 0.5% or 0.0%; check the bottle.

How to serve & pair

Serve very cold, straight up, in a chilled martini glass or coupe.

Good with marinated olives, salted almonds, anchovies or a cheese board.
