About Lysegrøn

Nearly half of this is green tea, and the green tea is the story. Sencha from Zhejiang — the name means roasted tea, and it’s the everyday green tea of Japan: mild, aromatic, with a light astringency that reads as freshness rather than bite. Alongside it, West Lake Dragon Well, hand-roasted the same day it’s picked by someone judging the heat with their bare hands.

Amber in the glass despite the green in the name, and drier than it smells. The citrus arrives first and the tea arrives second, which is the opposite order to most flavoured sparkling — where citrus is usually the last thing added and the loudest thing present.

Copenhagen made this one last, after the floral BLÅ and the dry Lyserød, to fill the gap where a crisp, mineral white would sit. It’s the one their own team points at seafood.

Well chilled, in a wine glass rather than a tumbler — the bowl gathers the aroma where a straight glass loses it.

About Copenhagen Sparkling Tea Company

Everything from this producer

Sommelier-built tea blends treated the way a winemaker treats grapes.

“some of the best no- or low-alcohol drinks I have ever tasted”
Julia Harding MW, JancisRobinson.com

In 2010, Jacob Kocemba was working the floor of a Michelin-starred kitchen in Copenhagen. The chef changed a dessert at short notice, and with more than seventeen hundred wines in the cellar behind him there was nothing on the list that worked with it. What he poured instead was a tea he had blended himself. Guests began asking for it by name.

Hundreds of trials later he had the basis for a range. In 2017 he partnered with Bo Sten Hansen and they sold their first bottle in Copenhagen that May. It is poured today in Michelin-starred restaurants around the world. When Fortnum & Mason first stocked the teas in London, the window read "Tea but not as you know it."

Editor’s NoteAugust 2026 · on this producer

These are the best-made sparkling teas we have tasted, and the care shows in the glass. Up to thirteen organic teas go into a bottle, brewed at different temperatures and blended the way a winemaker blends grapes, then rested two to three months before the bubbles go in. White tea for roundness, green for depth, black for body and tannin. The sweetness is the tea's own. It is poured around the world in Michelin-starred restaurants that take their pairings seriously, which is the company it deserves. Start with BLÅ. It is the one that carries a whole menu.

Others worth knowing

Common questions

Is it actually alcohol-free, or dealcoholized?
Never alcoholized. It is brewed from tea and carbonated, so no alcohol is made and none is removed — which is a different process from a dealcoholized wine. The label reads 0%, and that is the producer stating it rather than a rounding of something smaller.
Does it contain caffeine?
Yes. It is brewed from real tea, so Lysegrøn carries about 8.9 mg of caffeine per 100 mL — well under a cup of tea, but not none. Worth knowing if you are pouring it late, or for someone avoiding caffeine.
How long does it keep once opened?
About three days in the fridge, and it loses its bubbles faster than a still drink would, so a stopper is worth using. That is the honest reason the half bottle exists — about two and a half pours, opened and finished, with nothing left standing to go flat.
How should I serve it?
Well chilled, between 39 and 45°F, in a white wine glass rather than a flute. It carries real aroma and a narrow glass throws it away. The bottle has a Champagne cork — untwist the cage and ease it out, no corkscrew.
