A still rosé rather than a sparkling one — the format most alcohol-free ranges skip.

Tempranillo gives it more weight than a pale Provençal rosé would have, which matters when there is no alcohol carrying the body. Strawberry and stone fruit, and a finish that stays fresh.

The winery ferments in stainless steel first and takes the alcohol out at the very end, by vacuum distillation at low temperature — the gentlest of the methods available, and the reason the aromatics survive the process.

Halal certified and vegan. Serve it cold, around 46 to 50°F, with grilled vegetables, seafood or a salad.
