Senorio de la Tautila Espumoso Blanco (750 mL)

This is the bottle to open when you want something in a flute and nobody is drinking.

It is made the brut way from Tempranillo — a red grape worked white, which is how a lot of good sparkling gets made — and the bubbles are fine and hold rather than fading after the first pour. It is dry, which is less common than it should be in alcohol-free sparkling.

The winery ferments in stainless steel first and takes the alcohol out at the very end, by vacuum distillation at low temperature — the gentlest of the methods available, and the reason the aromatics survive the process.

Halal certified and vegan. Serve it cold, at around 43 to 46°F, with salads, cheese or canapés.
