A Pacific Northwest brand making a non-alcoholic spirit in the register of an Italian amaro.
The Pathfinder arrived in 2021 out of the Pacific Northwest, and it did not set out to stand in for anything in particular. Most of the category picks a target — a gin, a whiskey, a Campari — and works back toward it. This one took the apothecary shelf and the pioneering of the American West as its reference and built something that answers to neither.
What came out is closest to an amaro: bittersweet, herbal, bitter enough to hold its ground in a drink built around it. Bartenders reach for it the way they would reach for an amaro or a sweet vermouth, which is unusual for a bottle with nothing in it.
It has had a cult following and periodic scarcity almost from the start, which tells you more about the drink than any tasting note does.
