A Swedish house making wine in France, aging it, and taking the alcohol out at the end.
Oddbird was founded in Sweden in 2013 by Moa Gürbüzer, who had spent two decades as a family therapist working with families affected by alcohol. She wanted the question would you like your wine with or without alcohol? to become as ordinary as asking whether someone takes milk in their coffee.
The wines are made in France, in the Languedoc-Roussillon. What separates them is the order of operations: the wine is fermented and aged for up to twelve months as wine, and only then is the alcohol drawn off by vacuum distillation. Nothing is bought in already finished and stripped afterward.
Five drinks reach us. A still white built from five aromatic grapes, a southern red from the Grenache, Mourvèdre and Syrah trio, a sparkling Blanc de Blancs, a sparkling rosé, and a skin-contact orange that is sparkling as well — which is rare in any wine, with alcohol or without.
