About NON 8 · Torched Apple & Oolong

NON 8 — Torched Apple & Oolong, in 750 mL. Torched apple over oolong and keemun tea, with caraway and cacao behind them.

Two teas do the work here — oolong for florality and keemun for smoke — with caraway seed and cacao nib adding a bitter, savoury edge to the apple.

NON build everything on verjus, the juice of unripe Semillon grapes from the Barossa Valley. Nothing is fermented and nothing is removed, which is why it reads 0.0% rather than under half a percent. It is made to stand in for a textured white at the table rather than to imitate one.

Chilled, in a wine glass. It carries caffeine from the tea. Contains no alcohol.

About NON Drinks

A Melbourne partnership between a chef and an entrepreneur, building drinks from food rather than from wine.

NON is Aaron Trotman and William Wade. Trotman had spent time in fine-dining kitchens across Europe and came away thinking the problem was not that non-alcoholic wine tasted bad but that it was the wrong idea. Wade had cooked at noma. Between them they set out to build the experience of a wine glass out of ingredients rather than out of wine.

Everything starts from verjus — the juice of unripe Semillon grapes from the Barossa Valley, which brings acidity without fermentation. From there each drink is a recipe: raspberries cold-steeped for two days, chamomile for tannin and a creamy finish, Murray River salt for salinity. Nothing is fermented and nothing is removed.

The numbering is deliberate. Each is an attempt at a different wine occasion rather than a copy of a grape, and the labels list the ingredients the way a fine-dining menu would.

New to True Alcohol Alternatives (Beyond Wine & Spirits)?

The ambition is the same as any good wine or spirit: real structure and complexity, built from the drink's own materials. Tea brings tannin, roots and bark bring bitterness, fermented fruit brings acidity and depth. The foundation shapes everything above it, and the ingredient list tells you which one the maker started from.

Common questions
What does torched apple mean?
The apples are charred before they go in, which brings a caramelised, slightly smoky note that raw apple would not give.
Why two teas?
Oolong gives florality and keemun gives smoke. Between them they carry the apple and provide the tannin.
Does it contain caffeine?
Yes, from the oolong and keemun tea.
