About NON 5 · Lemon Marmalade & Hibiscus

NON 5 — Lemon Marmalade & Hibiscus, in 750 mL. Citrus and hibiscus over lemongrass and peppermint, dry and herbal.

Lemon verbena, lemongrass and lemon myrtle stack the citrus three ways; hibiscus and citra hops give bitterness, and a natural mushroom extract adds savoury depth.

NON build everything on verjus, the juice of unripe Semillon grapes from the Barossa Valley. Nothing is fermented and nothing is removed, which is why it reads 0.0% rather than under half a percent. It is made to stand in for a dry aromatic white at the table rather than to imitate one.

Chilled, in a wine glass. It suits salads, shellfish and anything citrus-led. Contains no alcohol.

About NON Drinks

A Melbourne partnership between a chef and an entrepreneur, building drinks from food rather than from wine.

NON is Aaron Trotman and William Wade. Trotman had spent time in fine-dining kitchens across Europe and came away thinking the problem was not that non-alcoholic wine tasted bad but that it was the wrong idea. Wade had cooked at noma. Between them they set out to build the experience of a wine glass out of ingredients rather than out of wine.

Everything starts from verjus — the juice of unripe Semillon grapes from the Barossa Valley, which brings acidity without fermentation. From there each drink is a recipe: raspberries cold-steeped for two days, chamomile for tannin and a creamy finish, Murray River salt for salinity. Nothing is fermented and nothing is removed.

The numbering is deliberate. Each is an attempt at a different wine occasion rather than a copy of a grape, and the labels list the ingredients the way a fine-dining menu would.

New to True Alcohol Alternatives (Beyond Wine & Spirits)?

The ambition is the same as any good wine or spirit: real structure and complexity, built from the drink's own materials. Tea brings tannin, roots and bark bring bitterness, fermented fruit brings acidity and depth. The foundation shapes everything above it, and the ingredient list tells you which one the maker started from.

Common questions
Why are there three different lemon botanicals?
Lemon verbena, lemongrass and lemon myrtle each give a different part of the citrus — floral, green and sharp. Stacking them builds the length a single lemon note would not.
What is the mushroom extract for?
Savoury depth. It sits under the citrus and hibiscus and is what keeps the drink from reading as a cordial.
What does it go with?
Shellfish, green salads, goat cheese — anything a dry aromatic white would suit.
