About Classic

A botanical tonic in the Far East bitters tradition, made in small batches in Singapore and formulated by an Ayurvedic specialist. Bittersweet, rich and herbal.

Twenty-one plants go in cold rather than boiled, which is what keeps the lighter aromatics legible next to the heavy ones โ€” peppermint, basil and hibiscus against clove, cardamom and star anise. The bitterness is doing real work: gentian, wormwood and quassia are all classic bittering roots, and cacao and carob sit underneath them to give the middle some weight. The sweetness is not added. It comes from the red grape, white grape and aronia the whole thing is built on, and from pomegranate molasses. Damiana, goji berry and sencha tea are in the blend as well.

Pour it over ice with soda, or into anything that would take a red vermouth. Shake gently first; the sediment belongs there. Contains no alcohol.

About Melati Drinks

Singapore botanical tonics, cold-extracted from Southeast Asian recipes that Lorin Winata traced back to her family's farmland in Bali.

Lorin Winata was working in venture capital in Singapore, in a job built around client dinners and evening events, and kept finding that the non-alcoholic end of a drinks list came down to water or something very sweet.

What she did about it started at her family's ancestral farmland in Jatiluwih, in Bali, where tonic recipes had been kept on palm leaves. She spent roughly two years on the formulation with a food scientist and an Ayurvedic specialist, working down from a shortlist of more than seventy ingredients traditionally used in Asian tonics to the ones that ended up in the bottle.

Melati is the Indonesian name for white jasmine. The blends are cold-extracted botanical by botanical over several weeks rather than boiled together, then hand-blended in Singapore in small batches.

New to Aperitif / Digestif?

Bitterness comes from botanicals โ€” gentian, cinchona bark, citrus peel โ€” and never needed alcohol to work, which is why this category translates directly. What varies is how much sugar balances it, and that figure is here.

Common questions
How sweet is it?
Bittersweet rather than sweet. What sugar there is comes from the red grape, white grape and aronia it is built on, and from pomegranate molasses. None is added, and gentian, wormwood and quassia keep the finish dry.
How does it differ from the Fresh?
Melati make two. The Classic is the darker and heavier of them, leading on red fruit, raw cacao and warm spice. The Fresh is built on watermelon, guava and lime and drinks lighter.
What do I mix it with?
Tonic or soda over ice with a strip of orange peel. It stands in where you would reach for a red vermouth or an amaro, so it also holds up in a Negroni-style build.
