Non-alcoholic spirits and canned cocktails, with mushroom extracts drawn out by ultrasound rather than ground in.

Little Saints makes two things: three non-alcoholic spirits in 750 mL bottles and 100 mL flasks, and a range of canned cocktails. Both carry extracts of Lion’s Mane, Reishi or Damiana, which is what the brand is known for — and how those extracts get into the bottle is the more interesting part.

Mushrooms are not ground and stirred in, which is the usual approach and the reason mushroom drinks tend to taste like mushrooms. Little Saints use ultrasound to draw the beta-glucans out of the Lion’s Mane and Reishi, and add that extract instead. It carries no flavor of its own. The Lion’s Mane is grown in California.

The spirits are built on oil-based extracts rather than flavored water, which is why they have some weight in the glass and hold up over ice instead of thinning out. Heat comes from capsicum, drawn from peppers, standing in for the bite alcohol would otherwise give. St. Ember’s sweetness is not added at all — it comes from palo santo, which belongs to the same family as fennel and mint. That palo santo is sustainably sourced, and one percent of proceeds goes to reforestation in Peru.

Others worth knowing

Common questions

What is it modeled after?
A sparkling non-alcoholic take on an espresso martini, in a 235 mL can.
What are reishi and damiana doing in here?
Reishi is a bracket fungus that grows on hardwood across East Asia, woody and bitter and not eaten as food. It has been used in Chinese medicine for roughly two thousand years, under a name usually translated as the mushroom of immortality. Damiana is a small aromatic shrub native to Mexico and Central America. Its leaves have a long history in Mexican herbal practice and appear in a handful of traditional Mexican liqueurs.
Will it taste of mushroom?
No. The beta-glucans are drawn out by ultrasound and the extract added on its own, rather than the mushroom being ground into the drink. The extract carries no flavor of its own.
What do the functional ingredients do?
Little Saints make claims about how their functional ingredients affect mood and focus. We are a shop, not a laboratory, and we have not tested them. These statements have not been evaluated by the Food and Drug Administration. This product is not intended to diagnose, treat, cure or prevent any disease.
