About Sudachi Citrus Extract

Kankitsu Labo 100% Pure Sudachi Extract, 9.3 fl oz, from Tokushima in southern Japan.

Sudachi is a green citrus the size of a golf ball. It looks like a lime and tastes nothing like one — the aroma runs toward yuzu and there is a peppery sansho edge behind an intense, clean tartness. Nothing is added: no colorings, no preservatives, just the fruit, pressed from the sides to keep the bitter peel oil out. One bottle holds the juice of about forty sudachi, so a drop is usually enough in a drink.

About Kankitsu Labo

A Japanese citrus specialist working with growers in Tokushima, Ehime and Yamaguchi.

Kankitsu means Japanese citrus, and that is the whole brief. Kankitsu Labo exists to carry fruit that has barely left Japan — sudachi, yuzu, amanatsu — to people outside it, and to give the growers and small manufacturers in the countryside a reason to keep going.

The fruit comes from the southern prefectures: Tokushima, Ehime, Yamaguchi. The extracts are pressed from the sides rather than crushed whole, which imitates squeezing by hand and keeps the bitter oil in the peel where it belongs.

Alongside the extracts there are candied peels and organic jams, all drawn from the same orchards.

A mixer is half the drink by volume, so its sugar is most of the sugar you will taste. That figure is on this page, and it is the fastest way to tell a dry tonic from a sweet one.

Common questions
What is sudachi?
A green Japanese citrus about the size of a golf ball, grown in Tokushima and picked in September. It looks like a lime and does not taste like one.
How is it different from lime?
Sharper and more aromatic. The aroma runs toward yuzu and there is a peppery edge to it, closer to sansho than to anything in a lime.
How much do I use?
A drop or two. The bottle holds the juice of about forty sudachi, so it goes a long way in a drink or over a dish.
