Description
Élivo makes this as a Chardonnay sparkling wine first and takes the ethanol out afterwards, at low temperature, with the aromatics captured and returned. What comes back is closest to a semi-dry cava: straw-gold, a long bead, and enough acidity to keep the fruit upright.
It is the bottle in the Élivo range built for a toast rather than a table. The cork is a Champagne cork under a wire cage, so it opens the way a cava does and needs no corkscrew. Serve it at 46 °F, cold enough to hold the bead.
The label is printed in Spanish, English, French and Arabic, which is what a house exporting to the Gulf since 2016 ends up doing. Six glasses to the bottle at a 125 mL pour.
