About Cardio Zero Rosé

A Garnacha rosé, which is the grape most of southern France and northeastern Spain reaches for when it wants a pink wine with fruit rather than just colour. Made in Galicia by Élivo and part of the Cardio Zero range, so it is built from grapes and processes chosen to raise the phenolic content of the finished wine.

Garnacha gives strawberry and red currant; the vegetable glycerin the range carries gives it weight, which is what a rosé usually loses first when the alcohol goes. Serve it properly cold, at 46 °F.

Synthetic cork; six glasses at a 125 mL pour.

About Elivo

The first winery in Spain to take the alcohol out, working in Galicia since 2008.

Elivo belongs to Mercantia Desarrollos Alimentarios, a food-innovation lab in Silleda, in the green northwest corner of Galicia. Its founder, Ramón Bodenlle, made the first alcohol-free wine in Spain in 2008 and sold it under the name Raisin Dor; the range became Elivo Zero Zero as the category found its audience, and the winery has been refining the same question ever since — how much of a wine survives when the ethanol leaves.

Their answer is a method of their own. The wine is made conventionally first, then the alcohol is drawn off by evaporation at low temperature, with the aromatics captured through membranes and cryogenics and returned to the liquid. A second technique the house calls DEMADERA carries the character of barrel time across into the finished red. The Cardio Zero line goes further in the opposite direction, built from grapes and processes chosen to raise the phenolic content of what ends up in the glass.

A 2017 research project earned the house its Halal certification, and its bottles have travelled since — to the Gulf from 2016, then to Southeast Asia and China. For a Galician lab that started with one bottle and a question, that is a long way from Silleda.

New to Non-Alcoholic Rose Wines?

Rosé here runs from bone dry to distinctly sweet, and the bottle rarely tells you which. The sugar per pour does.

Common questions
How much sugar is in a glass?
The label lists 0 g of sugar, 0 g of carbohydrate and 0 calories per 125 mL pour, with no added sugar. Nutrition labels may round very small amounts down to zero, so read it as next to nothing rather than none at all.
Does this bottle need a corkscrew?
Yes. It is closed with a synthetic cork and opens like any other still bottle. The one bottle in the Élivo range that does not is the Zero Zero Deluxe Sparkling, which takes a Champagne cork.
Is it certified Halal?
Yes. Élivo earned Halal certification out of a 2017 research project and prints the Arabic mark on the front of every Cardio Zero label. If a certificate is needed for an event, ask and beClink will request a current copy.
