Description
Cardio Zero is the second Élivo range, and the difference from Zero Zero Deluxe is in the grapes and the process rather than the packaging: the house selects for and works toward a higher phenolic content in the finished wine. Phenolics are the compounds that carry a red wine’s colour, its grip and its structure.
This red is a Garnacha, Mencía and Tempranillo blend. Vegetable glycerin is added for texture, which puts back the weight that leaves with the ethanol, and ascorbic acid keeps the fruit fresh.
The Spanish side of the label suggests 61 °F, the English side 46 °F. Take the warmer figure for a red. Synthetic cork; six glasses at a 125 mL pour.
