About Amaro

Yes Cocktail Co. Amaro in 500 mL, produced and bottled in Paso Robles. Bitter and herbal with citrus running through it, and built to be poured over ice.

Lauren Butler and Brandon Alpert have made mixers, syrups and bitters there since 2015. This is the first bottle in the range meant to be drunk on its own rather than added to something else, and it carries a glass without needing a spirit behind it.

On the rocks, or lengthened with soda. Contains no alcohol.

About Yes Cocktail Co.

Cocktail syrups, garnishes and cherries made in Paso Robles, California.

Yes Cocktail Company works out of Paso Robles, on the central California coast, making the parts of a drink that usually come from a plastic bottle: orgeat, cocktail cherries, dried citrus for the rim.

Their stated position, printed on the orgeat bottle, is that they have been focused on locally sourced, entirely natural ingredients from the very first batch, simply because the best cocktails require the best ingredients. The ingredient lists bear it out. The dried orange is orange. The dried lemon is dried lemon. The orgeat is water, cane sugar, almonds, almond bitters and orange blossom water.

It is a small range and an unglamorous one. Nobody photographs the orgeat. It is the bottle that decides whether the drink works.

New to Aperitif / Digestif?

Bitterness comes from botanicals — gentian, cinchona bark, citrus peel — and never needed alcohol to work, which is why this category translates directly. What varies is how much sugar balances it, and that figure is here.

Common questions
What is it a substitute for?
An Italian amaro. It is bitter, herbal and citrusy, and it is built to be drunk on its own over ice rather than mixed into something else.
Do I need to mix it with anything?
No. On the rocks is how it is meant to be served. A splash of soda lengthens it if you want something lighter.
Who makes it?
Lauren Butler and Brandon Alpert, in Paso Robles, California. They have made mixers, syrups and bitters there since 2015, and this is the first bottle in the range made to be drunk on its own.
