About Reserve Duo

Two bottles that show both sides of Bolle's top tier: the Grand Reserve Blanc de Blancs, a twice-fermented sparkling Chardonnay, and the Chardonnay Reserve, the still wine from the heart of France.

One is for a toast and one is for the table. Between them they cover most of what a bottle is asked to do over an evening, without either standing in for the other.

About Bolle

Bolle Drinks

Wine fermented a second time after the alcohol comes out, to rebuild what removing it takes away.

“Best Non-Alcoholic Rosé of the Year”
London Wine Competition, 2025

Bolle takes its name from a phrase in its founder's childhood. Roberto Vanin grew up in Treviso, where prendi una bottiglia di bolle — bring a bottle of bubbles — was the sentence that turned an evening into an occasion. The brand is built around that rather than around abstinence.

What separates it is a second fermentation. Taking the alcohol out of a wine takes the aromatic compounds and the body with it, which is why so much of the category tastes thin. Bolle ferments the wine again afterwards, with their own yeast strain and fresh grape juice, to rebuild what was lost — rather than adding flavoring or sugar to cover the gap. They hold a patent pending on the method.

The fruit comes from La Mancha, the high plateau south of Madrid, and the range runs from a Blanc de Blancs through a sparkling Rosé to a still Chardonnay. The Grand Reserve is the same Blanc de Blancs given nine months on the lees, which is where its brioche character comes from.

Others worth knowing

Common questions

Are both bottles sparkling?
No, and that is the point of the pair. The Grand Reserve Blanc de Blancs is sparkling; the Chardonnay Reserve is a still white. One is for a toast and one is for the table.
Why a sparkling and a still rather than two of the same?
Because an evening rarely asks for one thing twice. Between them the two cover the opening glass and the one that goes with dinner, and neither is standing in for the other.
Is this the top of the Bolle range?
Yes. The Grand Reserve is the most expensive bottle Bolle make and the Chardonnay Reserve sits just under it, so the pair is the range at its best rather than a sampler of the entry wines.
