About Chardonnay Reserve
A still Chardonnay from the heart of France, made as wine and then dealcoholized, with a second fermentation on a blend of grape juice and dealcoholized wine rather than anything added to make up the difference.
Green apple and fresh pear lead, touched with lemon zest. The palate is precise and mineral-driven, with crisp orchard fruit, vibrant acidity and a clean finish.
Serve it cold, and treat it like the white you would put beside fish, chicken or a plate of cheese rather than like something to keep for a toast.
Sold as a case of six 750 mL bottles.

Common questions
- Bolle makes two still Chardonnays. How do they differ?
- The Chardonnay Reserve comes from France and is the pricier of the two, made by re-fermenting a blend of grape juice and dealcoholized wine. The Still Chardonnay is the everyday bottle and blends Chardonnay with Silvaner. Both are dry; this one is the more precise.
- What does “twice fermented” mean on the label?
- The wine is fermented and dealcoholized in the usual way, then fermented a second time on a blend of grape juice and dealcoholized wine. Nothing is added back afterward to replace what the alcohol took, which is the more common shortcut.
- Is it dry?
- It is medium-dry rather than fully dry. Residual sugar sits at 29 grams per litre and the crisp acidity carries it, so it reads fresher than the number suggests, but it is not a bone-dry white.
