About Vita Chiara

Vita Chiara is Athletic's Italian-style pale, and it behaves like one: bright, dry and light on its feet, with the malt kept in the background where an Italian pale keeps it.

The barley is heirloom Eraclea, and a light dry hop of German Hallertau Blanc brings lemon and white grape over the top. That hop is why the beer reads as vinous rather than as citrus juice, and it is the most distinctive thing about the drink.

It is built for a table rather than a couch. Charcuterie, pasta and calamari all sit well with it.

About Athletic Brewing

The first US brewery built only for non-alcoholic beer, fermenting every batch in full rather than taking the alcohol back out.

Athletic Brewing began in 2017 with a problem Bill Shufelt could not solve at a bar. He had stopped drinking in 2013, and what he was handed instead was thin and apologetic. He left a career at a hedge fund, sought out John Walker, a head brewer working in Santa Fe, and the two of them set out to make beer worth ordering that happened to have no alcohol in it.

What they arrived at is what still separates the brewery from most of the shelf. The usual route is to brew at full strength and take the alcohol back out afterward, by heat or by membrane, which costs the beer some of its aroma on the way. Athletic ferments each batch in full and removes nothing, holding the alcohol down by controlling the brew itself, temperature above all. Nothing is stripped at the end and nothing is added to make up for what left.

They built in Stratford, Connecticut, the first brewery in the country given over entirely to non-alcoholic beer, and later a second in San Diego. Two percent of sales goes back to restoring local trails. The range runs from the year-round bottles a shopper already knows by name, Run Wild and Upside Dawn and Athletic Lite, through a stream of limited releases that arrive, sell, and are gone.

New to Non-Alcoholic Beer?

Two routes, and they taste different: brewed at full strength then dealcoholized, or fermented so that little alcohol ever forms. Process on this page says which. Removal can thin the hop aroma; restricted fermentation can leave a malty sweetness.

Common questions
What makes it Italian-style rather than a standard pale ale?
An Italian pale is drier and lighter-bodied than an American one, with the malt held back and the hop character aromatic rather than bitter. Vita Chiara is built that way.
What is Eraclea barley?
An heirloom barley variety, used here in place of a standard brewing malt. It is what gives the beer its lighter, cleaner grain character.
Is it hoppy?
Aromatic rather than bitter. The Hallertau Blanc goes in as a light dry hop, so you get lemon and white grape on the nose without the bite of an IPA.
