About New Orleans Spiced Cherry

All The Bitter New Orleans Spiced Cherry in a 2 fl oz bottle, made by hand in Chico, California. Tart cherry and star anise over hibiscus and rosehips, finishing on warm baking spice.

It is the fruitiest of the range, where the Old Fashioned Aromatic is dry and spiced and the Orange Cardamom is bright and citrus-led. Gentian and dandelion root give all three their bitterness.

Five to seven dashes in eight ounces of sparkling water over ice. One full dropper is a dash. Contains no alcohol.

About All The Bitter

Two former French Laundry sommeliers making bitters by hand in Chico, from whole dried botanicals and no flavorings.

Carly and Ian Blessing met working as sommeliers at The French Laundry in the Napa Valley. They married, had two sons eighteen months apart, and stopped drinking. When the pandemic closed restaurants, Ian was taking real-estate classes at home and finding he did not care about any of it.

What he did care about was what was appearing on the non-alcoholic shelf. Bitters were the gap — the ones that existed were alcohol-based, so a bitters-and-soda or an Old Fashioned stayed out of reach. The first batches were made in mason jars in their kitchen.

They still make it by hand in small batches in Chico, California, from raw dried herbs that are organic or wild-foraged, with no flavorings of any kind. Emails and messages still go straight to the two of them.

New to Bitters / Flavor Enhancers?

Bitters are used in dashes rather than measures — a few drops change a whole drink. Judge them by the ingredient list and by what they are meant to lift, not by anything on the nutrition panel.

Common questions
How does this differ from the Old Fashioned Aromatic?
It is the fruitiest of the range — tart cherry, star anise and hibiscus — where the Aromatic is dry and spiced and the Orange Cardamom is bright and citrus-led.
Is it sweet?
No. The panel reads zero sugars. The cherry reads as fruit rather than sweetness, and gentian root keeps it bitter.
How many dashes should I use?
Five to seven in eight ounces of sparkling water, over ice. One full dropper is a dash.
