Ingredients for 4 Servings:
  • Cod: 250 grams, super fresh
  • Green Asparagus: 2 stalks
  • Lumpfish Roe: 50 grams, salted
  • Coriander: 15 leaves
For the Mayonnaise:
  • Lime: 1, zest and juice
  • Soy Sauce: 1 tablespoon
  • Egg: 1
  • Sunflower Oil: 2-3 dl (or similar)

Preparation Steps:

  1. Prepare the Cod: Begin by freezing the cod for at least 24 hours. Before serving, cut it into thin slices (3-4 mm) and salt them two hours prior. Gently rub the salt into each piece.
  2. Create the Mayonnaise: Combine the lime zest and juice, soy sauce, and egg in a cylinder-shaped container. Using an immersion blender, blend while slowly adding oil until the mixture thickens into a mayonnaise. Adjust the lime and soy sauce to taste.
  3. Cook the Asparagus: Blanch the asparagus in boiling water for one minute, then cool in ice water. Slice thinly.
  4. Assemble the Dish: Just before serving, add a few drops of lime juice over the cod. Place a dollop of mayonnaise in the center of each plate, arrange the cod, asparagus, lumpfish roe, and coriander aesthetically around it.
